For Pastry: Preheat
oven to 350 degrees F. Sift together flour, sugar and salt
into large bowl. Cut in butter using pastry blender or 2 knives
until mixture resembles coarse meal. Add yolk and blend with
fork until dough just comes together. Press into bottom and
1/2 inch up sides of 9-inch springform pan. Bake crust until
golden brown, 20 to 25 minutes. Cool completely.
For Filling: Preheat oven to 350 degrees F. Using electric
mixer, beat cream cheese, vanilla and salt in large bowl
until fluffy. Using electric mixer, beat eggs and sugar in
medium bowl until thick and light. Add to cream cheese mixture
and beat until smooth. Spread over crust. Bake until center
is barely set, 35 minutes. Cool completely.
For Topping: Preheat broiler. Combine flour and brown sugar
in medium bowl. Cut in butter until mixture resembles coarse
meal. Sprinkle over cheesecake. Broil 6 inches from heat
until topping is browned and crisp, 2 to 3 minutes. Cool
completely, before serving. (Can be prepared 2 days ahead
and refrigerated. Bring cheesecake to room temperature before
serving.)
