Directions:
Mandarin Cake: Put all together in a bowl and beat by hand
for 3 minutes until well blended to smooth consistency. Pour
into buttered 8x8 pan and bake @ 350 degrees for 30 to 35
minutes. Frost while warm.
Topping: Bring to boil and pour over cake, pricking with
fork. 3/4 of the recipe seems to be enough.
"Microwave Marge" writes a column for the Foster
City Islander (CA). Joyce's mom baked this for our office,
based on recipe directions. Joyce cut it into bite-sized
rectangular servings, and it didn't last long. I got a big
end piece with very little topping. It was delicious, moist
and tender, and plenty sweet enough. Recommended. 5/20/2003.
