1 1/2 lbs. zucchini
1 cup walnuts - coarse chopped
1/2 cup sliced scallions
1/2 cup olive oil
1/4 cup dry red wine
2 tablespoons lemon juice
1/4 cup water
Cut zucchini in 1/2" slices.
Saute zucchini and scallions in oil for 5 minutes, stirring
frequently. Add wine, lemon juice, and water. Simmer for 5
minutes, then add walnuts. Serves 6.
